Watermelon is one of my favorite fruits to use in cocktails, it tastes yummy, holds a lot of juice and gives such a lovely colour to any drink.
This combo of watermelon and mint is super refreshing and very moreish. (Also I’m sure it counts for one of your five a day right?!)
I have used Stoli vodka simply because that was what was in the cupboard, this recipe does not call for anything premium and the citrus and fruits are what you really want to come through here.
Before you start ensure your glass is chilling in the fridge or freezer if you want a frosted effect
Add a few chunks of watermelon to a boston glass and muddle until juice is released
Squeeze couple of wedges of lime and/or lemon to the shaker
Add 50ml of Vodka and a sprig of mint to the shaker
Fill shaker with ice and shake vigorously for around 15 seconds
Take glass out of chiller and coat rim with brown sugar by dampening the edge of the rim with a lime wedge and dipping it in sugar
Double strain into a small rocks or martini glass
Garnish with a watermelon slice and mint sprig
